But Pacamara isn't just about looks. It's a hybrid with a story, grown with care and known for producing some of the most complex and expressive cups in the world of specialty coffee.
A Cross Between Two Worlds
Pacamara is a hybrid between two distinct Arabica varieties: Pacas, a natural mutation of Bourbon known for its compact size and sweet cup profile, and Maragogipe, a large-bean variety known for its striking presence and unique character. First developed in El Salvador in the 1950s by the Salvadoran Institute for Coffee Research (ISIC), the goal was to combine the flavor clarity and structure of Pacas with the exotic size and cup potential of Maragogipe.
The result? A varietal that can yield an incredibly dynamic cup—when grown in the right environment and processed with care.
Flavor Profile: Bold, Creamy, and Full of Nuance
Pacamara is known for its big body, creamy texture, and layered complexity. Depending on where and how it's grown, it can offer everything from tropical fruit and floral aromatics to chocolate and spice. In our lot from Las Veraneras, the cup is round and smooth, with a creamy mouthfeel and subtle notes of tropical fruit that feel almost like a delicate milk chocolate—despite being 100% pure coffee.
This is a coffee that evolves as it cools. Its structure allows it to hold up beautifully across multiple brew methods, but it shines especially in pour-over, Chemex, and cupping formats where its clarity and body can fully express themselves.
